Everything But the Kitchen Sink Lentils (a one-pot meal!)

1 cup green lentils (rinsed well)

1 cup brown rice

1 low sodium vegetable bullion cube

1 cup mixed veggies finely chopped--either spinach, kale, broccoli, parsnips, carrots, sweet potatoes bok choy... you get the picture)

1 tablespoon olive oil

1 teaspoon cumin

Add all of the above to a medium-sized sauce pan and cover with water, about 1/4 inch over the surface.

Bring to a boil.

Once boiling, cover and simmer until lentils and rice are tender (about 3o minutes).

Check back occasionally to make sure the water hasn't all evaporated. If it seems dry, add a little more water.

*The lentils and rice form a complete protein and, with the vegetables, you have an entire meal in one pot.
